HG Walter is a west London legend: famous not just for its reliably world-class meat, but also for staff who mix expertise and courtesy, know every detail about the provenance of your purchases, and who are always happy to do three-quarters of the prep work on your joint themselves. It's a small store, and they keep a lot of their stock out back, so be sure to ask if they don't have the cut you're after. Andrew Sharp's family have been raising sheep in the hills of the Lake District for four centuries, and his stall is now the public face of a small collective who have rebelled against standardised modern breeds. The lamb sold at this stall comes from the slow-growing Herdwick breed, and offers a dense, lean meat that is healthier and more flavoursome than the meat sold in most butchers.
