At Adagio in Greek Street pizza is sold 'al taglio' (by the slice) and priced by weight so you only get what you feel like eating, and with over 40 seasonally changing types to choose from there's little chance of you getting bored of the selection on offer. The secret of a perfect pizza, according to chef-manager Shelley Squire, is in the slow method he uses to prove the dough - Adagio comes from the Italian for 'slow' - and he spent time training in the technique with Giancarlo who owns a neighbourhood pizza place in Rome, a city renowned for its tradition of pizza al taglio. This attention to detail has clearly paid off, the pizza bases here are not just the boring bit which the exciting toppings perch on. Instead they are the perfect balance of crunchy, not too pillowy and similar to the schiacciata bread you find in Tuscany. And the wide choice of toppings, from bacon with smoked mozzarella to tuna mayo and archichoke hearts, creates just the right combination of flavours.Adagio images
