French chef Alexis Gauthier, former chef patron of the Michelin-starred Pimlico restaurant Roussillon for ten years, has taken over Lindsay House, the Soho venue previously operated by Richard Corrigan. The 1740s four-storey townhouse becomes Gauthier Soho, a 70-seat restaurant with dining room, and two private rooms, serving a classic French menu, drawing on Gauthier's training in the
south of France and under Alain Ducasse's Louis XV restaurant in Monaco. Gauthier sums up his what he learnt there: "The basis of Ducasse's
cooking is very simple - take the best ingredients from the local area
and respect them," he says. "That, and understanding your instinct, is
all there is to it. There really is nothing magical about cooking -
everyone has the potential to become a good chef." The ground floor of Gauthier Soho is devoted to an off licence and tasting room giving free reign to award-winning sommelier Roberto Dell Pietra - joint owner in the venture and former head sommelier at Roussillon - to showcase his 200 strong wine list, many of which are reasonably priced and available by the glass.
