The debut restaurant from Santiago Lastra is getting more than its share of press attention, well before it opens, and we can see why. Rene Redzepi's righthand man for the Noma Mexico pop-up, Santiago recently he won the chef category at the Young British Food & Drink Awards. At his hotly anticipated debut restaurant KOL, a two-storey space located in Marylebone's picturesque Seymour Street, he cooks modern Mexican dishes like langoustine tacos with sea buckthorn, lamb leg tostada cured in gooseberries with walnut oil and fermented chilis, and Kolrabi ceviche, followed by dessert of tamal served with corn-husk ice-cream. The restaurant's name comes from the Spanish word for cabbage (col) and hints at Santiago's approach to cooking - making even the simplest things extraordinary by treating them with care and attention. A tortilla station - complete with a traditional comal grill - and a specialist mezcal bar are set aside for these Mexican specialities. Adjacent to the bar, the 20-cover chef's table gives private dining customers a prime view through large windows onto the restaurant's second kitchen. Nordic minimalism combines with homely interiors to reflect the vibrant colour palate of rural Mexican where Santiago has spent time refining his craft.
