Since opening at the end of June 2012, Lima, the Peruvian restaurant from Virgilio Martinez, has been praised as: "One of the arresting qualities of dishes at Lima is their beauty," wrote Fay Maschler in the Evening Standard, while the Independent critic was "startled by its flavours, its zingy colours, its unexpectedness, and the charm of the waiters." For his first international solo venture Virgilio appointed long-time friend, Robert Ortiz who hails from the Amazon region of Peru, as head chef of Lima. The Peruvian menu has a crudo (raw) section, which includes ceviches and tiraditos, starters and main courses, and a tasting menu. Whilst Lima sources much of its produce from within the UK, the restaurant will also bring carefully selected and unheard of ingredients from small producers in Peru. Diners can enjoy carapulcra, for example, dehydrated potatoes that are grown at 4,000 metres. The restaurant's interior has been designed by March & White, who were also behind recent renovations at the Arts Club and Hyde Park Apartments.
