Backed by his mentor, Bruno Loubet, James Packman set up Le Swine to bring the ultimate bacon butty to the streets of London and beyond. After a year of working on the butty and researching the ingredients - which include free range, pure breed Berkshire and Middle White pigs farmed in Lancashire - Le Swine was launched. Each component of the butty is homemade, from the milk and onion bun, to the bacon butter and the ketchups, sourcing local ingredients where possible. Bacon sandwiches, including the Swine burger - gammon, egg and pineapple - are served on Lamb Street in Spitalfields straight from a beautiful sixties Austin Morris ambulance which also tours to festivals like Feastival and Glastonbury as well as to private events.
