Creating competition for Tapas Brindisa, their former employer, Roberto Castro, Ruben Maza and Joel Placeres have teamed up to open Lobos Meat & Tapas next to Borough Market. Sourcing ingredients from the neighbouring market, Lobos - 'wolves' in Spanish - has a strong focus on meat, with a menu of slow roasted leg of Castillan milk-fed lamb, Iberico pork selection, braised pork cheeks with mash and horseradish, and herb crusted lamb rack with parsley, mint, thyme and rosemary. Smaller dishes include ham, chorizo and smoked bacon croquetas; potato, onion and pepper tortilla; and potato salad with aioli. The dessert menu may be short but they're not to be missed, with double chocolate and pistachio cake, dulce de leche cheesecake, and lemon panna cotta with amaretto strawberries proving tempting options. Situated under the railway arches, the dark and cavernous space is ideal for enjoying sharing plates and lashings of wine.
