Walking passed Macellaio RC in Exmouth Market, you'd be forgiven for thinking you've stumbled across the latest Damien Hirst installation. Not so. The suspended tuna fish and rib of beef are the mainstay of the menu at Roberto Costa's rustic Italian restaurant where the emphasis is on beef steak and - the 'steak of the sea' - tuna. Drawing on the similarities between the two red meats, the beef and tuna are treated and cooked in similar ways, both dry-aged in-house inside the restaurant's own ventilated cellars, butchered in four quarters, and cooked simply, seasoned with rock salt and olive oil. Working with small farms in North West Italy, and sourcing tuna from Italian tonnara, dishes include tuna bresaola served like tagliata with rocket and parmesan and the steak tonnato-style with anchovy and tuna mayonnaise. Beyond the meat-filled front window, interior design is wooden tables, leather sofas and cutlery as coat hangers. One of three Macellaio RC restaurants in London, there are further sites in South Kensington and, from 2016, in Southwark.
