Combining restaurant and butcher, Macellaio RC doesn't shy away from the source of its hero ingredient - proudly displaying its ventilated cellars in the front windows of its shop front. Large slabs of prime beef are hung in plain sight, where the meat is kept at a cool zero to four degrees, ensuring it dries and softens giving it a wholesome flavour. Diners are encouraged to choose their steak - beef selected for its quality, its meat to fat ratio and buttery taste - at the in-house butcher's counter before it's cooked and served at the table. Alongside tagliata and sirloin cuts of steak, the menu also includes battuta all'Albese (Italian-style beef tartare), charcuterie platters and pasta dishes as well as traditional Italian desserts, Latte dolce fritto and Tiramisu. First opened in South Kensington in October 2012, the Exmouth Market site launched in August 2015 with a third in Southwark in 2016. The interiors are rustic with wooden tables and leather sofas, pieces of cutlery fixed to the walls as coat hangers and front of house staff add to the theatre of the restaurant by stabbing the steak knives into the tables.
