Inspired by his travels through Rome and Napoli as well as L.A. and New York, chef Chris Leach continues the success of his 10 Heddon Street residency with Manteca on Great Marlborough Street. He has taken what he's learnt from fire cooking at Pitt Cue Co and the seasonality of Petersham Nurseries to this new venture with David Carter of Smokestak. A restaurant with an upbeat tempo, dishes which revolve around nose-to-tail cooking, hand-rolled pastas, and fire-cooked cuts are served to a playlist of afrobeat, hiphop and soul. Everything from the skin to the fat of the animal is used in small plates of duck sausage with prunes and Armagnac or larger dishes from the wood-fired grill such as grilled lamb neck. Fresh pastas might include tonnarelli, brown crab cacio e pepe or agnolotti dal plin, pork and hazelnuts - a labour-intensive pasta based on a Piedmontese recipe. To finish, simple desserts include burnt orange and whipped custard as well as fried caramelle, apple and cinnamon. Capturing the conviviality of Italian dining culture, Manteca is all about sharing really good food with friends and - in keeping with that laid back vibe - half the restaurant is held for walk-ins.
