Starting a new trend, Shoryu Ramen - meaning 'rising of fortunes' - was the first traditional Ramen bar to open in London. Launched in 2012 and owned by the Japan Centre's CEO Tak Tokumine, Shoryu Ramen has a handful of sites across London. Specialising in the traditional Hakata tonkotsu Ramen, the pork-based thick white soup provides Londoners with a new take on Japanese food - the hearty dish is built around a strong stock and also includes meat, egg, noodles and a whole lot of flavour. The restaurant also boasts authenticity with its recipe created by chef Kanji Furukawa, who was born and raised in Hakata, and the menu offers a number of versions of the dish. Diners can choose between Piri Piri, Wasabi, an intriguingly named, Dracula Tonkotsu and many others. Further options include fishcakes, dumplings, sashimi and miso as well as Japanese staples such as 'Shoryu Buns' - fluffy, steamed buns similar to the now well known hirata buns.
