SpringAustralian chef Skye Gyngell, who famously left Petersham Nurseries in Richmond in 2012, shortly after the restaurant was awarded a Michelin star, sets up Spring as her first solo venture in a wing of Somerset House that housed the Inland Revenue for the past 150 years. "There will be 18 chefs," according to the Evening Standard, "and everything from breads, cheeses and even vermouths will be made on-site." The kitchen is adjacent to the grand dining room and covered garden atrium that makes up the 100-cover restaurant. Well known for her culinary style, and her highly creative and delicious use of fruits and vegetables, the menu - which features scallops with fennel, dandelion and gorgonzola dressing to start and turbot with porcini, breadcrumbs and bonemarrow and fillet of beef with anchovy, brown butter and wild greens as mains - makes use of in-season ingredients. After becoming culinary director at Heckfield Place in Hampshire, Skye has told reporters that she is craving city life and with this new restaurant she's certainly back in the spotlight as far as London's dining cognoscenti is concerned.
