The Game BirdMaking full use of the diverse produce of Great Britain and its surrounding oceans, James Durrant puts locally sourced ingredients to good use at The Game Bird, the in-house restaurant at The Stafford hotel in St James's. Orkney sea scallops, Salt Marsh mutton and Lincolnshire smoked eel are on the menu alongside a changing selection of pies, puddings and stews while a traditional Sunday roast is served from a trolley with gravy and all the trimmings. Given the restaurant's name, it's clear that British game is a feature, with roast grouse, deer tartar, and game pie among the options. Durrant brings with him 20 years' experience at Michelin-starred restaurants including Gordon Ramsay's Royal Hospital Road and Claridge's. He was at Jason Atherton's Maze and Maze Grill for five years before relocating to Hampshire in 2010 to open The Plough Inn in Longparish which was awarded a Michelin Bib Gourmand.
