Within a new building on New Inn Yard, near to Shoreditch High Street, Tonkotsu Shoreditch features a huge light installation made from 1,600 recycled bamboo chopsticks. The eleventh site in London from co-founders Ken Yamada and Emma Reynolds, this Tonkotsu restaurant has modern interiors featuring patterned tiles, polished concrete and wood details. As with all Tonkotsu restaurants - first launched in Soho in 2012 - ramen is what it's all about. Each bowl comes with a choice of three different types of fresh noodles, made in-house daily using mid-century machines imported from Tokyo. No visit would be complete without a juicy steamed gyoza, in classic pork, ginger and garlic, king prawn, and shiitake and ginger. The fried chicken kara-age also comes highly recommended, served alongside Eat the Bits Chilli chicken wings and other sides like squid and prawn popcorn, and padron pepper and okura tempura with matcha salt.
