Former Nobu head chef Scott Hallsworth offers a varied and seasonal menu of Japanese cuisine with a contemporary European twist at Wabi London on Lincoln's Inn Fields, offering similar fare to his Sussex restaurant. After six years at Nobu London the Australian-born chef was sent by Nobu Matsuhisa himself to launch Nobu Melbourne, and he brings with him fellow Nobu London alumnus Taiji Maruyama who oversees the sushi bar. Named after the Japanese Wabi-sabi, a movement characterised by simple, undeclared beauty, Wabi London aims to push the boundaries of gastronomy. Note, for example, Hallsworth's signature fare of foie gras martini with umeshu jelly, nashi and black vinegar; onsen egg with dashi-soy, truffle salt and chives; and tea-smoked duck tataki with burnt ginger amazu sauce. Wabi also takes pride in its cocktails which feature a great selection of exotic choices which, in some cases, are made using hard-to-find Japanese ingredients. General manager Richard Moore arrives at Wabi from overseeing all 27 restaurants at Harrods as Senior Operations Manager at the famous Knightsbridge department store.
