Where the Pancakes AreThe brainchild of Dutch woman Patricia Trijbits, popular pop-up and street food trader Where The Pancakes Are can be found in Flat Iron Square near Borough Market from autumn 2016 - its first bricks and mortar home. Sweet, savoury and gluten free crepes come in many guises from breakfast buttermilk stacks to buckwheat blinis. As well as pancakes served in the traditional way - with chocolate sauce, maple-agave syrup and butter, or lemon and sugar - you'll find them filled with smoked streaky bacon with blueberries and maple-agave syrup as well as caramelised pineapple, toasted almonds, coconut, lime syrup and mint. The limoncello ricotta combines cheese with layered with citrus peel.
