Marble tables and a simple, earthy interior set the tone at Wilder Restaurant & Bar, a British restaurant at Boundary London run by Richard McLellan, former chef at the Typing Room. A natural installation by East London floral design studio Worm decorates the ceiling, overhanging the space where up to 60 diners are served trout and crayfish, scallops with turnip, green plums and broth as well as venison, beets, elderberries and rye. The menu is all about simple British ingredients - McLellan regularly visits Sir Terence Conran's Georgian retreat in the English countryside, Barton Court, to source ingredients from the 145-acre estate - with a focus on sustainability and seasonality. To go with a glass of wine, beer or cocktail - some made with gins from East London Liquor Company - are posh bar snacks including pigs head, beremeal and beer onions, potato and smoked roe and oyster and skate cheeks. With a focus on craftsmanship, much of the furniture and ceramics have been made by hand by local artisans and architects.
