Think of Zima , Alexei Zimin's street food restaurant in Soho , as a Russian culinary A to Z, taking you from Kamchatka staple crab claw, served with bread crisps and red caviar, to Yaroslavl black caviar with traditional sides via that Ufa favourite, 'Medovik', or honey and sour cream cake. Something of a celebrity in his home country, owner Alexei is a TV presenter, editor-in-chief of culinary bible Eda magazine and he runs a hugely successful restaurant and cookery school, Ragout in Moscow. At his London restaurant, right next door to the legendary Ronnie Scott's, tapas-style creations are made with classic ingredients from all corners of his vast homeland - sturgeon, herring, scallops, crab, venison and caviar, of course. To drink, there's Russian beer Siberian Crown and vodka infusions flavoured with unusual combinations like fennel and tarragon, basil and strawberry, and lingonberry and apple with curry leaves. Looking like a Soviet-era speakeasy vodka bar, the restaurant is adorned with propaganda slogans and symbols embossed on porcelain.
