Once a bustling trade in the streets of 17th century London, rum blending houses were non-existent in the capital for over a hundred years. But in 2019 Charles Merser & Co. bucked the trend and set up a new venture blending Caribbean rum in a four-storey townhouse in Temple. The business is discreetly signposted by The Post & Hound (the logo of Charles Merser & Co) on the window of the distillery on Essex Street. The logo harks back to a time when many Londoners were illiterate and were guided to the merchant houses by symbols. Rarely open to the public, you can go behind the door by invitation only on select open days when you're shown the underground cask store, blending room, bar and tasting room, all fully restored and set up to make rums the way they were over one hundred years ago.
