This restaurant is the living incarnation of Chelsea dining, and the 'smart casual' dress code is clearly unnecessary for a clientele who were born wearing their ties. An elegant dining room is decorated in subtle shades of brown and gold, the staff are so welcoming they feel like the trusted servants back at Mummy and Daddy's place in Hampshire, and the food is incomparably brilliant - as it should be at these prices. This was the restaurant that made Gordon Ramsay famous for his foie gras and it continues to be very much in the great man's style. Since taking over in 1998 his successor, Billy Drabble has upheld the Aubergine reputation and its Michelin star with intelligent modern touches - like skate in black butter or poached lobster tail - added to classic dishes.
