This St James's site formerly home to Ristorante Fiore (where Petrus began its life) has been revamped by prolific restaurateur Claudio Pulze. Pulze appointed Pierre Koffman, who trained under the Roux Brothers and is the chef/proprietor of Le Tante Claire, to help with the setting up of the kitchens. So Ashley Hancill, formerly of Inn on the Park and The Pig's Ear in Chelsea, takes charge as head chef delivering a menu full of traditional French dishes. Typically you'll find tartare de boeuf au couteau (steak tartar with fries and mixed leaves), cassoulet Toulousain (butter bean casserole) and lamb, pork and Toulouse sausage on the menu. During the renovations the room's original colour scheme and a previously unseen skylight were revealed, so giving the restaurant its deep gold colour as well as original period features.Brasserie St. Jacques images
