The food is overseen by John Nugent who, with close to 20 years of experience at Searcy's - the people behind the catering at nearby St Pancras - knows what he's doing. British dishes are the flavours to expect; the Northumberland beef and lamb coming from a farm owned by the company and hung in the purpose-built room on the premises.
