By rights we should be a nation of jittering hyperactives judging by the proliferation of coffee chains in the capital. Sometimes it seems you can't go 500 metres without passing the ubiquitous green Starbucks awning. Quite how coffee shops managed to take over the high streets of the country that's best known for its tea drinking is baffling. In the UK we drink a staggering 165 million cups of tea every day. Compared to just 70 million cups of coffee. At Tea, next to St Paul's, the tradition continues with brews of black, white, and green leaves plus an extensive list that covers most other flavours you can think of. Using filtered, oxygenated water, organic milk, fairtrade sugar and a generous heap of tea leaves, these infusions are the way a cuppa is meant to be slurped.
