The eco-friendly restaurateurs who brought us Acorn House, Arthur Potts Dawson and Jamie Grainger-Smith, have extended into the east with this their second venture. The Water House, on the banks of a canal in Hackney, is run on the same eco-friendly lines as the original, only more so. Being beside the canal isn't just scenic, it means that they can run a generator and air conditioning using the water that naturally runs past their back door. Laying claim to be the first ever entirely carbon neutral restaurant, even the tables are made from fallen trees, worms recycle left over food and ingredients are delivered by electric car. The pair behind the Water House are certainly ones to watch, having met at Jamie Oliver's restaurant and with Potts' training at Roux, they know a bit about food too. Naturally, there's an emphasis on home grown seasonal goods, sustainably sourced. A short, simple and distinctly British menu might include mackerel, spring lamb, English asparagus and baby leeks - depending on the time of year, cooked in a clean, simple way. A three-month delay in opening has only heightened anticipation for the sequel to Acorn House - from small acorns mighty trees do grow.
