Orecchiette di grano arso with cime di rapa, salted anchovy, chilli and garlic or beef featherblade braciole, meatball, cacioricotta. Puglia's seafood specialities are also well represented with shellfish pastas, wild sea bass and bream cooked in a salt crust, or a rich stew of octopus in clay pot with black chickpeas.
