Using British produce from nearby Borough Market, Paul Bates (formerly of The Beaumont and Intercontinental Park Lane hotels, executive chef of OXBO Bankside has put together an all-day menu which includes Cox apple, cider marinated salmon, Cornish monkfish cheeks, pea shoots and radish. This stylish restaurant on the ground floor of the Hilton London Bankside hotel, the first Hilton in central London since 2006, also offers meaty mains like sirloin of Gloucestershire beef with sauce Bearnaise and New Haven Hake with squid, mussel and shrimp stew. The open kitchen adds to the theatre of the restaurant which is decorated with exposed metal screens, bare brick work, reprocessed tube station tiles and bespoke joinery. Rich fabrics, inspired by William Morris, feature greens, mustard yellows and browns which match the seltzer bottles decorating the adjoining The Distillery bar.
