Sourcing ingredients from the neighbouring market, Lobos - 'wolves' in Spanish - has a strong focus on meat, with a menu of slow roasted leg of Castillan milk-fed lamb, Iberico pork selection, braised pork cheeks with mash and horseradish, and herb crusted lamb rack with parsley, mint, thyme and rosemary.
