Borough Plates hotels title= A two-month pop-up showcasing the wonderful ingredients you can get at Borough Market , Borough Plates offers seasonal dishes made only from ingredients sourced at the market itself. Founded by Paul Hannagen, who made his name as the head chef at Bermondsey's much-missed Zucca restaurant, he asks a different chef each week to step into the kitchen to collaborate with the market traders. Eating here you can enjoy plates of charcuterie from Cannon & Cannon, red mullet caught by Sussex Fish, salt baked celeriac served with Beaufort Cheese courtesy of Mons Cheesemongers and a raw milk pannacotta from Hook and Son. It's all served in t he old nineteenth century trustee's building with its high-ceilinged lower floor now a restaurant and bar, leading to a second, larger restaurant up the oak staircase.
