Positioned high above the streets of London's West End, aqua kyoto is on the fifth floor of the former Dickens & Jones department store. Overseen by award-winning chef Paul Greening, the restaurant serves contemporary Japanese cuisine, which sees the Japanese technique created with fine British produce and a number of foraged ingredients. Sushi and sashimi are made to order at an open sushi kitchen, where skewers grilled on a sumibiyaki charcoal grill are also prepared. The restaurant's signature dishes include a crab salad with tomato and dashi bubble and suckling pork belly with eel, root vegetables, wakame and jade oil. While the signature dessert, Forest Floor, is an indulgent mint panna cotta with raspberry sorbet and chocolate crumble.
