Best friends Richard Thacker and Andy Watts, the first international competitors to be invited to the annual Buffalo Chicken Wing Festival in the US, are on a mission to bring the perfect chicken wing to London. After a series of pop-ups, festivals and events including Night Tales, The Star of Hackney Downs and a successful residency at Dalston Street Feast, Randy's Wing Bar has its first permanent site at the Here East development, close to the Queen Elizabeth Olympic Park in Hackney. Wing-lovers, it's what you've been waiting for. Randy's takes you around the world with five styles of wings: there's the traditional North American Buffalo (fried and tossed in a spicy Buffalo sauce with truffle blue cheese) and the Bombay (marinated in Indian spices, oven baked, robata grilled and served with raita) while the Hanoi Tuk Tuk represents Vietnam with lightly battered, fried and tossed wings in a tangy Vietnamese fish sauce, served with crispy garlic and fresh coriander. Timber flooring, steampunk lighting and industrial lamps, communal tables and banquettes made of reclaimed wood keep things informal while glass doors open up to make the most of the canal-side location during the summer months.
