Memphis meaty ribs, gently smoked over hickory wood, and served with Americana-inspired cocktails are the order of the day at Porky's BBQ, the Bankside restaurant set up by husband and wife team Joy and Simon Brigg following inspirational road trips to America. Barbecue is at the heart of Porky's, which has already seen success with Porky's in Camden. Memphis does it best, it seems, and Porky's aims to recreate the rich flavours of Memphis BBQ. That means pulled pork that's been cooked low and slow (for over 16 hours) in the smokers they have imported from Oklahoma. Burgers - 6oz homemade 100 per cent British beef pattie with lettuce, tomato and onion in a sesame bun - can be pimped to become a porky burger when they're topped with pulled pork, crispy bacon and jack cheese. Meaty ribs and rib tips, homemade BBQ sauce, juicy burgers, whole smoked chickens are also on offer. Best washed down with a 'tex-mex smash' cocktail, cold American, local craft beer, or a shot of pickleback (bourbon chased with hommade pickle juice) while listening to classic Tennessee tunes.
